This lesson may have been shared with me from this forum and I followed it when I started hosting parties using my cellar, but I had no idea it’s from at least 1,600+ yrs ago (or 2,000 ish)…

“Everyone brings out the nice wine first and then the cheaper wine after the guests have had too much to drink; but you have saved the best till now.” John 2:9-10

I wonder how many other wine lessons have been around for many millennia!

The real secret is to be sober enough to recognize when the host brings out the plonk…

Many, many! Wine is eternal.

"In vino veritas" - Pliny
"Wine prepares the heart for love unless you take too much."-- Ovid

And, back to the Bible, some extremely valuable advice on cellaring: "No one, having drunk old wine, immediately desires new; for he says, 'The old is better.'"

Hmmm, I might go the other way around for enjoying the evening: the secret is to get enough of the good stuff that you don't notice the plonk.

Apparently there were a few complaints that the wine tasted watery.
