Has anyone here tried to extract just a little bit of wine and then come back to a bottle 1+ years later? Experience?
As most OG CT crew would probably guess, I'm skeptical on the time horizon in any other circumstance, but the caveat makes the engineer in my think "what's the difference between his wee extract vs. the Angel's Share that occurs naturally? To that end, I'd postulate he is probably right with my own two caveats:
- He has now introduced a new point of failure, the puncture hole. My experience is not all corks respond the same, I've even thought about 3-D printing some "puncture picks" to put into the wound after I Coravin, especially for those that end up on their sides in the fridge.
- My soapbox gripe remains the needle needs to be sterilized after each unique use or you risk introduction of contamination at the time you burst the argon down the needle. Prior to my starting an "everclear rinse" protocol I experienced a noticeable rate of failure/decline.
