A French Choucroute with pork shoulder, ribs and belly slow cooked with apples, lavender and white wine with red cabbage sauerkraut and roasted shallot Yukon mashed potatoes with a Maille Dijon mustard.

Dr. M's entree last night - Pescado Veracruzo, fresh hog-nosed snapper with tomato, onion, garlic, olives and chiles.

Rainy day in the mountains but a great day for slow cooked steer... Underneath this medley of green and white and orange veggies lies a 4.5 pound chuck roast braised and soaking in a couple of bottles of Guinness. In 6 hours it will be all good.

Dawn, it looks (and, I am sure, tastes) divine!

For a cool rainy night in the NC mountains I chose a chuck roast slowly cooked all day... Served with a very fine bottle of juice.

Santa Ynez at Grapolo, all the food is great but the calamari is off the hook, the best. Then we stuck a dollar on the ceiling at mavericks. Great times.

A buddy came over Friday night. The wife had a few glasses and half of the food on her plate - he and I (hangs head very low) finished what remained of the lamb and wine...

After we'd prepped, and once the lamb was in the oven, we drained these:

2007 Domaine du Mas Blanc (Docteur Parcé) Vin de Pays de la Côte Vermeille Le Blanc des Junquets
2008 Foreau Domaine du Clos Naudin Vouvray Demi-Sec

I had opened these earlier in the day, wrote the tn's and served them with dinner:

1998 Château Pech-Redon Coteaux du Languedoc La Clape L'Épervier
2008 Domaine Vindemio Côtes du Ventoux Regain (half of bottle used as cooking wine)
2004 Parmelee-Hill Syrah Block B
2006 Tardieu-Laurent Côtes du Rhône Guy Louis
2007 Château de la Négly Coteaux du Languedoc La Clape La Falaise

Needless to say, I ate very little on Saturday, and consumed NO wine...
























I can neither confirm nor deny that two naps were had the following day

So I didn't get into Mythos last night, and was hit with a massive headache while sitting down for a meal at Ahl Trang. The SIL took me back to her house and Mrs CiH brought me my Bun with grilled pork and sliced Spring Roll. It was really delicious around 2AM, when the head pain and nassau was under control. Today was a different story. The ladies went to the massive outlet, where I began to lose it after an hour or so of crazy tourists with useless things they needed to buy. Yes, I guess I was one, window shopping at Tourneau and grabbing a pair of Clarks shoes. I stopped of at one of the Local Food Trucks I had seen earlier that morning. The Korean BBQ Taco truck had amazing food in both traditional and fusion styles. For Lunch I had the Spicy Pork Taco Box, with deep fried meatballs covered in a sweet/spicy red chili sauce. The taco has a small piece of egg foo young on top and a sliced spring roll with sauce on styled on top. The spicy pork taco was absolutely delicious and spicy as promised. A small salad with ginger dressing was also included in this to go special. Here is the photo:



Mrs. CiH decided after a hard afternoon of shopping (which I slept through) was envious and off to the Truck to get some dinner. It was very good with an '08 JL Wolf Kabinett Riesling.

slow roast salmon on a bed of fingerling Yukon Golds with Cremini Duxelles and the first pick of my organically grown haricots verts
Ken Wright 2010 PN. I think I've outgrown these wines, but it's OK
Cognac will follow


sloppy/crappy presentation--sorry, but delish (needed a bit of acidity but out of Vermouth)

I have a Boston butt on the weber right now, rubbed in a spice concoction made in backwoods North Carolina. Applewood is sprinkled among the natural charcoal for smoking. I mixed up a brew of the applewood-infused H2O, apple cider vinegar, and Buffalo Trace bourbon to spritz the meat and keep it moist. A little homemade slaw is mixed and incorporating in the fridge, and I'm drinking some bourbon and water out of my Masters 2012 cup while watching golf. Heck of a Sunday so far!

just poured an '09 Sleight of Hand The Archimage into the decanter. Trey says this is spicy, smokey and deeply red-fruited. Sounds like a good match for smoked BBQ to me!

Seems like that kind of day. I have a pork shoulder going out here, dry rubbed with an improvised mix of salt, pepper, sage, rosemary, and smaller amounts of garlic powder, brown mustard, brown sugar, coriander, and savory. I've actually never done this before, but it's going at 250ish on our gas grill, the smoker box filled with applewood (briefly soaked in Maker's Mark) is doing its job, and everything smells great. 3-4 more hours to go, maybe?

I have a rack of pork that I just seared, slow roasting in the oven. Smells divine! I was in the mood for Aussie Shiraz (which is unusual for me...) and so I have decanted a 2000 Kilikanoon Shiraz Oracle to go with it. The nose of that wine indicates something so massive that I really don't think it will pair that well with pork. But who really cares that much about pairing? I never get too fussed about that because if the wine is good and the food is good, there never seems to be much complaint.
