I was able to hit little Saigon in Orlando twice for Bun with grilled pork and slice spring roll. Bun is my favorite dish. Rice noodles, Sprouts, Cilantro, some greens and fresh mint topped with grilled meat. I smother it in fish sauce and load on the sriracha chili sauce. I forgot to take a picture of this, but if you ever find yourself in theme park city, hit the corner of Mills and Colonial because there over 10 restaurants that are with in a stones through that specialize in this dish as well as Pho. Now I'm hungry and going to eat fast food. Bummer.

Had my brother & his family over for dinner; appetizers of fresh vegies and salami with two different aged cheeses, teriyaki tri-tip roasted on the grill, accompanied with a salad, rice dish and oven warmed cibbata bread, with a desert of various cheese cakes. We killed six bottles between the four of us - a 2005 Marqu'es de C'aceres Rioja Reserva, a 2005 Borgo Scopeto Toscana Borgonero Vino da Tavola, & a 2010 BV Pinot Noir for us red drinkers, and for the white drinkers, a 2008 Buty white blend, a 2010 Chateau Ste Michelle Chardonnay, and a 2010 Trader Joes Chardonnay (sometimes my wife's palate is not very discriminate).

Sorry, no pics, but the wine was very good and the food delicious; a great time had by all.

organically grown spring beans (2nd pick of the year)

blanched for about 2 min in salted water.
Shocked in ice water just long enough to set the color
sauteed in butter for about 30 sec.

I made a New York cheesecake on Monday. Possibly the easiest thing I have ever made and utterly head-bendingly gorgeous with the centre ever-so-slightly gooey still

ricotta cheese or cream cheese? i made the mistake of ordering a piece of cheesecake at a restaurant in little italy that ended up being "traditional" italian cheesecake made with ricotta cheese. it was foul! we tried to send it back, and after some major intimidation from the waiter and his manager, we paid our check and exited the restaurant swiftly, checking over shoulders to make sure no one was following us!

That looks wonderful. Do you bake your pizza on a pizza stone? I love using the stone but a good sprinkle of cornmeal on the wood spatula is a must to get it to slid on to the stone.

HRH has pans that she likes. When I make the dough we use a stone with the sprinkling of cornmeal.

Mascarpone. So basically it's just mascarpone, creme fraiche, eggs, sugar and vanilla extract for the filling.

Mother's Day dinner for PURPLE that yours truly prepared for my lovely bride:

* Tuna Tartar on Homemade Sesame Toasted Won Tons
* Majinola Wagyu Beef Tenderloin topped with a Cremini Mushroom, Veal Stock, Cabernet Sauvignon, Thyme and Butter reduction sauce.
* Rosemary Garlic Yukon Gold Mashed Potatoes.
* Sauteed Spinach.
* Vanilla Ice Cream topped with Homemade Ghirardelli Chocolate Dipped Strawberries.

I have some food porn pictures I'll upload and post tomorrow including some prep pictures.

Sauce is looking really good in the pan, ready to go as soon as the tenderloin finishes standing:

The beef was excellent! Second time I've had their Wagyu beef tenderloin in the past 5 months or so. Excellent but rich as all get out. I can definitely recommend these guys.

    WIML93

    Tasted non blind. Opened and decanted one hour before serving. Followed over two hours.

    Dark garnet color in the glass, little cloudy throughout. Nose of underbrush, soapstone, currants, white pepper and plums. Flavors of currants, berries, raspberries and cherries. Medium to bright acidity, medium to firm tannins, full bodied. Drink now with some air or continue to hold. No rush. (93 pts.)

    I'd say very comparable. Hellacious marbling in their products. So rich you can't finish a normal cut (like I couldn't when we were at CUT).

    Chicken Piccata with mashed

    First, brown the breasts and then into a 200F oven for warming

    Then start the sauce with garlic and broth

    Add lemons and capers

    After reducing for a few minutes add butter and chopped parsley and reduce for a few more minutes

    Plated and poured

    Bon appetit.

    Just had lunch at SEA restaurant in the very small SE Asian section of the Rochester. I had Bun with grilled pork and sliced spring roll. For $7.50, this was an incredible lunch. The one place I usually go is in an uppity suburb across from CenturyWines of Pittsford, though I've become friends with Mamasan and her husband, but they charge $12 for the exact same thing with no grilled pork option because of a large kosher vegetarian population in that 'burb. I thought it would be worth comparing to Little Saigon in Orlando, but its not really fair as the folks that run this small place a Cambodian and its filled with paintings of the old temples of Cambodia and sculptures of the budda.
