Wine you regret


I donate them to a church/synagogue potluck

I have a bottle of Amarone queued up for the next Seattle Tasting group meeting, there are always random wines at the beginning of the tasting. I am not a fan of Amarone.

Most of ours isn't wines we regret, but more that we buy more than we can drink, and for various reasons our consumption has slowed a bit.

We'll do a cellar clearing party once or twice a year. Over the past couple of years we have done a series of get togethers with that intent, each with a different theme: "Sparkler from around the world", "Pinots from around the world", Chardonnays, Whites/Pinks, etc. Open a couple of dozen bottles within theme, many of them Gragiste type buys, but with plenty of allocation level wines mixed in. Some may be pushing or past prime, some just excess quantity, some just ones we're curious about but have not gotten around to opening.

A couple of months ago, as spring shipping was gearing up, we did one called "Why the heck did I buy this much wine?? AKA Cellar Clearing Party". 48 bottles for 20 or so people, and we sent partials home with people.

All are good excuses to get together and drink some good wine.

We have a hospice that does a charity wine auction. They love putting together lots of donated wine.

Most of the stuff I may not be that into sits as it’s built to age and my tastes change, fickleness. I won’t shy from cooking with bottles of some petit sirah, which I found hidden the other day. I use a good amount of wine in cooking. More white than red, but in winters reds are great for stews, pot roasts, red sauces anything that uses beef broth for the most part and the vinegar idea is good. I go through lots of red wine vinegar. I like sandwiches on rolls, like a sub/hoagie whatever you happen to call it and red wine vinegar is a topping of preference. I can use it as a salad dressing with crumbly blue chunks and in places I would otherwise use apple cider vinegar much of the time. I definitely filter any homemade. It’s easy to buy a meniscus to get the right flavor starter.

Then there’s always just pouring them out. I don’t do much of that but I never really bought huge cellar defenders. At worst I have some decent petit chateau Bordeaux that needs to be consumed in the next few years and some WA state wine that were so impressive I bought from Full Pull and either their fading or are surprisingly better than I thought they would be.

Much like others:

1) If it is suspect terrible - I leave for the Wine Storage facility, they have a bunch of groups always looking for wines for blind tasting

2) If it is decent but I just have too much - I give it to some friends

The vinegar thing also puzzles me (we use a tablespoon or less per week)!

Acting on my new policy, emptied 4 bottles and put them out for recycling. Two weeks from now they will be joined by another ten or fifteen (ok, it may take two cycles and add up to thirty), and should already fix most or all of the issue!

By the way, one consumption pull down option is “delete bottles”. Seems ideal for this situation…
