The wines of Biondi Santi, with Federico Radi (Zoom tasting): Wine 3: Tasting sample mailed by a wine retailer for a video tasting with Federico Radi, Viticulture and Winemaking Director at Biondi Santi. 14.5% ABV. Medium to dark garnet colour. The most floral of the three wines. The floral notes are joined by dark fruit, light chocolate, light earth, complex spice notes, light tobacco, some sandalwood, and balsamic notes, with good acidity, dry, grippy, slightly rustic tannin, and very good length. The wine is a little austere at this point, but it keeps developing as it is breathes in the glass, and it really grew on me. I can see it pairing well with food already. That said, the wine is still way too young for enjoying it on its own. It should be interesting (and rewarding) to watch this age and mellow. 93(+)(?)

**I bought 3 bottles of this because I cant help it. I am curious...Like a little monkey. It keeps my mind fed and my my eyes alive. And...the price was good too! So what the hell...or hey

This is where everyone should just relax and drink this wine instead of believing in Santa Claus. In its depth of deepest red, there is so much energy and pull, making the smallest sip, last the longest time. This is definitely a date night wine right now...A bottle you can enjoy with someone you want to get to know better or again, because it takes its time.
Lots of evolution during 5 hours. Twists and turns take you from one region to another though the language of a rainbowed wine with many tales. We go from a hot Napa summer day to a trip across the ocean to Rhone, where the dry and tannic ceylon tea like notes flare like a peacock in the finish, bringing much confusion. As we take a rest, the cocoa appears. Wrapped in cold graphite with notes of pen ink and then the wood influences come back in the form of decimated cozy little baking spices. A long, punctuated clean finish takes you back around to...California.

This wine can replace any 200+ dollah Napa with ease. But like most big voluptuous things, the weight will eventually shrink it down to less than what it is today. Drink, Drink and be merry! Happy Holidays and what a GREAT HOLIDAY WINE!

Tastes like rocks wine. Could be from most any producer. I do not think age endears itself to wine that is +pH4.0. On opening the wine is super bitter on the finish. After some time in decanter and some very forceful aerating and sloshing around it opens up a bit, but it is still just undefined, funky, farty, feral and bitter. No acid, the wine is dead in the mouth. Not a fan.

But I have had various other Cayuse brands and other Rocks District wines with 5-10 years of age and everything tastes very bitter to me, in addition to being just flabby, without structure, which is honestly the most offensive thing.

5/19/2018 9:42:00 PM - Yes! I think so! It really depends on how you like your wine though. I think this wine can age easily for another 5-8 years before any real detrimental impacts from age. I find that I like my white wines on the younger side and this wine was perfect right now, really an amazing wine. But I know other palates really like the developed aspect of white wines, and I think this is a wine that can absolutely age longer and improve with greater tertiary notes. Consider yourself lucky if you have this in your cellar!

UGC Bordeaux Tasting (2015 Vintage) (San Francisco): Domaine de Chevalier (blanc) - A lovely wine and above all other whites tasted this evening - except for the Smith-Haut-Laffite blanc. An ensemble of 70 percent Sauvignon Blanc and 30 percent Semillon. The DdC has a more typical profile dominated by grapefruit flavors on the nose and palate. Detected a lovely lime element and just touch of clove – the latter of which - I am not sure where it comes from. Maybe the barrels used or perhaps the Semillon varietal? Sometimes I detect a bit of forest flavors in this producer, but not this time. Still, very complex and is one of the best dry whites tried this evening.

  • Comment posted by PT insurgent:

4/12/2018 7:30:00 PM - The wine was fermented in barrel and spent 18 months in barrel, 35% of which were new. That is definitely where your clove note is coming from.

Like biting into a green apple. The wine is exceptionally tart and lacking character.

Allegedly 35 months on the lees but I get none of that on nose or palate. Very tart and fresh.

Very simple wine.

According to the producer website the residual sugar is 11.3 g/l, which is JUST considered Brut. I think if the dosage was bumped up on the wine to Extra-Sec (12-17 g/l) territory the wine would just come off as a well balanced (sugar/acid) Brut and not a enamel stripping level of tartness that feels like a Brut Nature from a challenging vintage.

Alcohol listed as 12% ABV. I would like to know how much sugar was tipped into the vats to achieve that ABV and also account for the 11.3 g/l of residual...

  • Comment posted by PT insurgent:

5/13/2017 6:43:00 AM - The wine was definitely not oxidised. I had more of a problem with the greenness/tartness than the wine being nearly flat. I really found it tough going. It is almost like they over chaptalization the base but under dosed the sugar in the liqueur de tirage.

I visited these people recently, and basically bought one of everything (red) - and this sounded particularly interesting - and not just because the labels says "Fortificated". For 24 hours this was almost too hot to drink, but it calmed down - rich and flavoursome - somewhat simple, but slides easily down the throat with a decent finish - I'd expected something at least a little similar to Port, but this really isn't, well, it is, but it isn't. Next time I'm there I'll probably buy another couple of bottles to see how this develops.
