Highlights were a medicinal herbal component much like a fine Amaro and a rich savory earthiness that hinted on Tahini sauce. It was still changing in the bottle up to the last glass. Magical. |

With the extra 1.5 hours of air, the fruit emerged, nuances appeared, and the tannins melted into a long finish. Ahh, the power of cool climate Pinot, biodynamically farmed and spontaneously fermented! |

Strangely it was earthier, funkier and less fruit foward after 1.5 hours after being decanted then 2 hours. As the night grew on, it became more fruit foward and cherry driven. A very lively wine. Upon entry to the palate the fruit is lively and fresh before the wine settles into what one would expect from a 10 year old Rayas blanc. Plenty of life left here.
