Solid but not overpowering acidity frames a very mineral driven Sav Blanc. Some gooseberry but nothing in the way of tropical fruits or the like. As it warmed, a saline (are we allowed to use that descriptor?) component emerged that worked beautifully off our honeydew melon, fennel, and olive salad. The dressing was simply orange and lemon juices, orange zest and oive oil. It worked p e r f e c t l y with the wine. Oh, and some honeyed chevre on top didn't hurt either. This should age, and age well.
