Drank over 3 hours and left half the bottle which I tried again 48 hours later. At no point was this very enjoyable. Either extremely tight or there in no fruit left. I'm not sure where this is heading.

Fresh, varietal. Nice but you’d like to think that the New World can make wines of this standard and style at lower prices. Or maybe I’m wrong, must do a comparison tasting.

PnP: rustic ruby with light rim, red berry on nose, tart spine with brambly finish; 24 hours in fridge: some softening and ripening of mid palate, added tea notes. nice w grilled salmon; 48 hours in fridge, leaner, less fruit

No decant, but bottle’s been open for about an hour. Shows aromas of plum, blackcurrant, red cherry, raspberry, wet soil, a hint of cocoa powder. On the palate, the wine is simultaneously silky and broad-shouldered, packing a punch of raspberry, sour cherry,
and a touch of citrus on the midpalate. Bright and exciting, but could likely use a few more years of bottle age to sweeten things out (for my tastes only!).

opened an hour before dinner, this poured very dark. this felt very closed to me, the nose and mouth were somewhat closed and didnt really open up for the rest of the dinner. plenty of acid and tannins that point to potential. I would probably let these rest for another few years.

This is good though I thought it definitely showed the heat of the vintage; the nose was initially quite ripe, almost liqueur like though it did gain some minerality and freshness with air; the palate was big with a borderline warm finish and while it stopped short of having any prune or significant heat on the finish it was not my favorite Pavelot. That said I think with age this could turn out quite nice. I'd give this a decade really from here and see if the warm fruit gains complexity and everything balances out.

I hope this wine will continue to improve. It's not in a good place at the moment. It's a complex wine with a good backbone of fruit and refreshing mineral palate and nose. However, its quite sharp and acidic. Initially one might think it's very dry Sauvingnon blanc. It's very good with Salmon and a lemon beure blanc. On its own without food it's not for me.
After three hours the wine surprisingly it was much better it' has evolved and definitely not to be served too cold.

The 1/2 bottle kept in the fridge the next day was like a different wine it developed a buttery smooth lanolin texture still quite sharp but very pleasant. Very much a food wine and not for just drinking alone though.

Forgotten bottle at bottom of wine rack. Poured expecting the worst. Actually quite delightful. Cork did split when extracted. Pushed the last 20% in as it was too soft to use a cork screw. Decanted thru a tea strainer. Been drinking it for about 40 minutes and still good

Burgs, Birds, and Black Truffles (My place, Portland OR): The nose shows off more primary qualities than the previous two (understandably) but with the same level of savoriness to the tones of cranberries, raspberries, sour red cherries, roses, violets, brown spices, earth notes, leather, and some savory herbs. The Medium bodied feel is balanced and rounded with tart, medium+ acidity and silky, medium+ tannins. This is drinking beautifully and with just a bit of extra style as well as excellent depth across the nose and palate.

There is good depth and style here with a bit of primary quality that still exists to the fruit. The Medium bodied feel is savory and robust with tart, medium+ acidity and slightly coarse, medium+ tannins. The tannins are still a bit present and rough with it not showing off much resolution. If the tannins are able to resolve, this could see some more upside but I'm not entirely confident of that at this point.

The nose is balanced, perfumed, and savory with raspberries, sour red cherries, cranberries, leather, dried sour red fruits, earth notes, tobacco leaf, and some violets. The Medium bodied feel is balanced with tart, medium+ acidity and slightly drying, medium tannins. This bottle feels like it is on the downslope, but there is still a lot there to give joy. I may have liked this more on its own, but it paled in comparison to the 06 and 08.

Bouquet en harmonie, sur un beau mélange de petits fruits des champs & d'épices. Belle dimension florale qui apporte une belle profondeur à l'ensemble. L'ensemble commence à se fondre.
La bouche est élégante, toute en légèreté, le mélange de petit fruits rouges & d'épices est tout aussi présent en bouche qu'au nez. Bonne profondeur, il y en juste assez de mâche pour apporter un peu de corps à l'ensemble. Finale un peu sèche. Fort agréable.

Very good to excellent.

Paired with baked mulloway fish and chips, and a dear friend who loves to cook.

Good cork (cork travel less than 3mm). Took 60 mins to fill out and find balance in a decanter.

Drink now, the bright fruit is still there and just the right measure of aged character.

No formal notes, too enjoyable.

A bargain at approx $50 aud on clearance. Glad to have another bottle which I'll open and share in the next Australian winter.

Dark and rather dense red color. Earthy aromas with dark red berries, and some vanilla and spices. It actually reminded of a Nuits-St-Georges. Quite masculine and rustique on the palate, with a bit coarse tannins. After a couple of hours in the glass, the aromas turned into more soft, developed and delicious Burgundy aromas. The wine seems to need another few years in the cellar. Impressive for a Savigny!

Drinking beautifully right now. Subtle fruit with earthy aroma and palette. Very balanced with fine tannins. medium complexity and finish. Very enjoyable.

PnP. Served at about 18 degrees C. Good deep colour, a vintage characteristic. Rim a little watery. Not very expressive to begin with, as it is rather firm. Pleasantly so, mind you, some may even want to stress the minerality. The nose has furniture polish, wet earth and some spice. A very solid wine with a firm yet not forbidding structure. With time in the glass, the charm comes through. Fruit, smoothness and lovely length manifests itself. Some previous bottles have needed this time to come through, but the last one before this was fresh fruit from the word go.
