Post Crucifixion 2021, Bierzo Spain Enchanting nose of flora, violets, mixed of ripe and fresh fruits, cherries, strawberries and sour plum, fresh herbs. Smooth transition and inviting entry, palate mainly echo the nose, lots of hidden characters still hidden under as the wine is still at her youth. Refine tannins with sufficient acidity in balanced, with some sweet spice and herbs within. Medium to full and substantial length in the finished. Approachable now to enjoy her beautiful flora nose or cellar for 4-5 years to uncover her hidden characters. 93-95 Pts

Intense ripped fruits, mainly cherries and berries, aroma of nuts, herbaceous and Chinese spices. Though the wine is still young, transition and entry is pleasant and reasonably smooth. The palate is rather complex with firm tannins, which needs time to mature and developed towards her full potential. Reasonable finishes at this age. Suggest to revisit 3-5 years later. 91-93 pts

Uncorked and decant in the glass, 20-30 mins is good and ready to drink. A forward fruity nose, rich intense riped fruits, mainly cherries and berries, slight spice and fresh herbs, licorice, plummy after a while. Smooth entry, palate mainly echo the nose. Firm tannins but blends well with the wine with balanced acidity. The wine is ready now believed further development over time. Suggest start drinking now and observe her development over time. Should reach her peak in 2-3 years and continue to enjoy over the next 4-5 years. 90-91pts

Penfolds Grange 2002 Drank direct from bottle, opened 45 minutes before drinking, with all bros in HK. :) This Penfolds was the thorn among roses.....very Aussie on the nose, very different over the other 3 bottles of Bordeaux. Color was bright, deep purple, with reasonable clarity. Though 21 years of age, nose was very refreshing, tons of fruits, intense red, strawberry, raspberry, with some blueberry. Very Aussie....greath strength, toasted herbs, slight oak, cedar, little oak, nice nose. Entry was extremely smooth, very silky, refine tannins, subdued acidity, she's at her prime.....enjoy for next 3-5 years. Mid palate was full, rich with strong characters, chewy and meaty. Long finished, lasted beyond 55 seconds. Drink within next 5 years before she goes downstream. 94 points.

Chateau Carruades de Lafite 2000 Decant for 50 mins in small decanter, with great brothers over dinner in HK. This aged has a nice color, deep ruby purple, good clarity and still looks fresh! Excellent storage! Fruity nose with naunce of berries, cherries, mainly black, some strawberries. Toasted fresh herbs and morning greens, cedar, licorice, baked tomatoes. Rather complex nose. Seemless transition with smooth entry, palate is very elegance with rather complex characters, mainly echo the nose. Medium to full body, refine tannins with balanced acidity, feels slightly tapering down stream towards the end. 40-45 seconds finish. Drink now or within next 3 years. 93 points.

Chateau Angelus 1994 Drank direct from bottle after opening for 45 mins, with good brothers and nice cosy Chinese restaurant in HK. Wine of great age, ruby red, garnet purple with nice orange rim. Profound old barn nose, very leathery, old french oak, earthy, with asian herbs, star anise, mushrooms, cigar box. Rich palate, with silky smooth tannins and refine acidity. Complex characters with multi layers, evolving over each pour, rich mineral, chewy and meaty. Medium to full body with great length lasting close to a minute at finished. 95+ points.

Chateau Haut Bailly 2009 Direct from bottle with 2 hours of decanting, with great ambience and brothers in HK. Rather closed from start, takes long time to opens up. This wine is rather young to drink now, but from the nose and palate, she's well structured and meant for aging over few decades. Deep garnet purple, fresh and sparking clarity. Nose with ripe fruits, mainly black with red and blue, berries and raspberries. Toasted fresh herbs, forest grounds and slight earthy with cedar. Entry was rather smooth, though at this young age, elegance with firm tannins and fresh acidity. Complex character lays deep within, needs time for all to emerge, likely through longer cellaring or slow decanting under 16-18 deg C for few hours. Very nice finished, long, mineral with undiscovered elements. Great wine, best drink 5 years later and enjoy for next 15-20 years. 94-97points

Chateau Smith Haut Lafitte 2012 Drink direct from bottle with great friends in HK. It was unfortunate to have drank this wine without a proper Bordeaux glass, unable to release her full potentials! However, the legendary Smith Haut Lafitte never disappoint! Nose was great, intense, fruity with profound black and blue fruits, rich and firmed, sea breeze with a little oak. Entry was rather tight initially, needs time, especially with smaller glasses. Given sufficient time, the wine becomes more expressive, rich minerals with strong characters evolving with multi layers! Tannins is still firm, with great supporting acidity. Lasting finished with reach palate that stays in the throat beyond a minute! 92-94 points

Herbaceous, earthy, sligh oak. Smooth transition from nose to entry, elegance and palate mainly echo her nose. Personal opinion, drink a little early, potential for great growth! Finished is long, everlasting, lingers within the hind of your throat. Excellent wine. 94-97..... patience tells. Cheers!

Finished with spice lingers within the throat for beyond a minute. Great wine though it's not a sparkling vintage! Cheers!

Nose was rather shy initially, over time opens up with riped red and blue fruits, cherry, strawberry, blueberry and some wild raspberry. Fresh toasted herbs with asian spices, green capsicum and earthy undertone. Entry is subdued, starts to be more expressive after few seconds while the wine fills up the palate, medium to full body, very firm tannins with balance and fresh acidity. Mainly echo the nose, with mineral and strong spice. Finishing is of reasonable length, lasted 45 secs or longer. Though this wine is already 9 years old, still at her youth. Still room for maturity over next 5-7 years and enjoy there after over 6-8 years. 91-93 pts

Gramercy Cellars Syrah John Lewis Reserve 2014. Decant in small decanter and tasted over 2 nights. This wine is still at her very youth, need long gentle decanting. Tasted the 1st evening after 90 mins decanting with a small decanter, the wine was extremely tight and unopen! Swirling the wine in a large wine glass, sipping to explore, seems needs much longer time. However, on the 2nd evening, the wine is more ready. While still decanting and in parallel allowing the wine to warm up to serving temperature, 18-20 deg C, the nose started to brightens up with intense riped fruits, though the colour is dark, ruby purple, the nose tends to be more biased to red fruits, strawberry, raspberry, red cherry and blueberry, rich spice, with a little sweet tobacco. At this juncture, entry is silky and gorgeous, rich characters but not overwhelmed, very elegant and rounded mid palate, medium to full body. Tannins is rather firm with fresh acidity, medium to long finished. Transition from start to finish is seamless, patience is the key element to enjoy this wine. Suggest to keep aside and re-explore after 3-4 years. Enjoy 5-7 years there after. 91-93 pts
