Opened and let sit for an hour. Used a Durand to remove the cork - intact and in fair condition.
Zalto Universal stem.
Dark purp[le color. Not showng much sign of bircking.
Nose offers some dark fruits, touch of menthol and tobacco and licorice root.
Good fruit flavor with sufficient acidity. An elegant wine with freshness and some zip while showing complexity with layers of mint, fresh tobacco and red fruit.
I was surprised at the freshness and depth of fruit still present in a 28 year old wine.
Enjoyable.

Remarkably well preserved, no hint of browning.

Decanted immediately before dinner, an hour after opening. Nose and palate redolent of sweet blackberry with a touch of eucalyptus. Tannins integrated, acidity still holding well.
Delicious with lamb

From the producer:
"This exceptional 2020 vintage has produced fruit of the highest quality. A slow ripening period had delivered a distinctive pure varietal character. Fruit parcels primarily from the Johnston owned estate surrounding the McLaren Vale winery provided the framework for this elegant Shiraz, with a mixture of seasoning in both French and American oak, only 18% being new. Displaying aromas of Satsuma plum, black cherry, and vanilla bean, delivering a rich and long palate of dark chocolate, mocha, cedar and coconut."

Cannot keep up with the previous three vintages imo. Could be bottle variation, happened before with Pirramimma.
Rich but somewhat limited palate including fruity notes and a sweet finish.

The opposite of the face-smacking, jammy, fruit-forward Australian Shiraz. PnP at cellar temp, and I knew from prior vintages that I prefer this without food as it is nuanced and bordering on subtle. But don't think subtle is bad, as this wine is a beautiful blend of raspberry and blackberry in perfect balance. Interestingly, there's nice kick of pepper on the finish that is unexpected given the delicate flavors of the fruit, but the pepper kick is a great reminder of the varietal.

Medium red. Some deposit. Nose of red cherries, herbs, amphora lift and complexity. Lavender. Wonderful and most unusual.
Palate is sweet red cherries, lighter style, quite acid but not overly so. Would it have been better drunk young? The pundits thought so.
I’m going to keep my last bottle for some time to see what it does. I’m quite curious about it. Beautifully pure and clean for a complex, long winemaking process - 180 days on skins in beeswax lined amphorae…

This wine still needs more time. On day 2 and still just opening up. Well balanced and classic in design. But fruit is a little buried by structure. I’d wait 5 more years.

Strawberries, red licorice, and hints of black pepper on the nose. The palate leads with a fleeting suggestion of vanilla that vanishes so quickly one isn’t entirely sure it was ever there. A second sip confirms. What predominates on the tongue is bold blackberry and spiced plum, with notes of sage, cigar box and black licorice. This is very fresh and velvety in mouthfeel. The finish is long and fruitful. Decanted for 90 minutes, poured at 68 degrees. It continued to evolve as it warmed to room temperature in the glass.

This was not to my liking, very light in body and texture. The fruit was young and acceptable. Will not add this to my summer drink list. I prefer the 2020 Cab instead.
