Made like new-wave Barossa Shiraz. The fruit was completely destemmed and fermented in new puncheons that I knocked the heads off of (the same puncheons then used for aging the co-fermented version). Following vinification with native yeasts the wine was put down to two, higher-impact, French oak barrels. A total score-whore of a wine but shamefully delicious too. Two barrels made.
