2013 La Jota Cabernet Sauvignon Howell Mountain

“75% C.S., 10.5% Merlot, 8% C.F., 4.5% P.V., & 2% Malbec from the La Jota & W.S. Keyes Vyds hand-harvested 9/17 – 10/25/13 into small, 30-pound boxes to prevent crushing, and then brought to the winery for hand-sorting. After destemming & light crushing, the must was cold-soaked, maceration being for 20 days. Winemaker Chris Carpenter fermented the juice with native yeasts in a combination of open- & closed-top s/s tanks. Following gentle basket press, the wine underwent in-barrel malolactic fermentation, rounding the acidity & integrating the vanilla character of FR oak (89% new), where it was aged for 19 mos. 14.5% ABV, 0.63g/100ml T.A., & 3.67 pH; $85 sugg retail.”
