“87% Merlot, 10% C.S., & 3% C.F. from vines (ave 25 yrs of age) planted in gravel & loam soils;
“Maceration for 3 to 4 weeks, depending on the vintage. Extraction of the color and tannins with punching downs (pigeage) and pumping over (remontage). Everything is done at 26-28°C in temperature controlled vats in order to manage extraction.
“Ageing in thermo-regulated stainless steel tanks.
“Wine is racked before bottling.
