The Vintage The growing season in 2007 was picture perfect in Napa Valley. The dry, warm spring weather was a great beginning to the year. With an excellent fruit set, mild summer weather and no extreme temperature spikes, the fruit developed in ideal conditions. The weather began heating up in August, raising the sugar levels. September and October proved to be mild, giving the fruit additional time to ripen under the California sky. The grapes were harvested at the end of September through the month of October as the flavors in each vineyard block matured to perfection.
Winemaking The grapes were grown in vineyards located in St. Helena, Rutherford, Calistoga, Yountville and Oak Knoll. The fruit was fermented at an average temperature of 85°F with gentle pump-overs for excellent flavor and color extraction. The wine was aged in a combination of American and French oak barrels for 19 months. Merlot increased texture and softness on the mid-palate. Petite Verdot and Malbec added complexity and additional layers of ripe fruit flavors to the wine.
Tasting Notes The 2007 Cabernet Sauvignon displays graceful aromas of cherry, plum and vanilla. It has aromas of black cherry and toasty oak. On the palate, the wine is plush with pleasing flavors of plum, blackberry and creamy oak. These wonderful fruit flavors balance beautifully with the soft structure and lingering finish. Enjoy now and for the several years to come.
