  January 4, 2023 - purchased on release, cork in great shape, soaked 2/3, ullage mid-neck.
  
  decanted 45 min, quarter-sized dollop of sediment remained. clear as a bell, surprisingly deep garnet, to red tinted w/copper on the edge; the very savory nose of herbs, pine & dark soil, black currants; med-full bodied; wild, distinct red & black currant fruit is subdued by the more herbaceous mid-palate, black tea tannins are fine & resolved, wild currant acids, which helped with rich sauce. solid at 2.5 hours.

  pan-roasted guinea hen, wild-foraged oyster mushroom ragout w/thyme, sherry, crème fraîche.
