  January 13, 2023 - Clear pale lemon; clean medium nose of wax, yellow beans and fresh lemon; dry; high acidity; noticeable phenolic bitterness; high alcohol; full body; pronounced flavour intensity; palate is tarter with addition of pith and orange blossom; long finish; drink now or in 10 years; aging gracefully - still has a lot of years left; hoped for more tertiary at this point; beautifully crafted wine - definitely better with sushi than on its own
