    December 21, 2012 - Decanted for 2 hours and consumed over the course of several hours with other mature wines; this Lynch-Bages seemed to transform itself into a different wine every 30-40 minutes each time we returned to it. Color was deep and rich with no hint of oxidation. The first visit was disappointing with herbal green peppers dominating both the aroma and taste. After 30 minutes more the green pepper was completely gone and it was a completely different wine; aroma and taste were all about layer after layer of rich mature red fruit. Another 30 to 40 minutes and it evolved further; all about earthiness with some leather and cedar. By the final visit in another 30-40 minute it was yet a different wine, all about earthy, charcoal smokiness. Quite a lot going on in this bottle and a very wild ride over the course of several hours - more so than I have ever before experienced in one bottle of wine.
