  May 12, 2013 - Sparkling, medium saturation salmon color. Nose is dominated by the CO2 with some yeastiness coming through. Initial palate is all strawberry and sweet honeysuckle but this changes into citrus, grapefruit, and even lemon with a astringent and surprisingly long finish. Not a lot of depth, but you wouldn't expect that from a sparking rose. This is a perfect fill-in for a lemon-lime soda if you want more to be more mature and sophisticated. Perfect sipper for a hot day. Would be great with BBQ. Plan to serve another bottle later today with Mexican food.
