October 13, 2013 - Very, very good wine and somewhat overperformed my expectations. I have found some of David's cabs to be heavily tannic but this was supple and velvety with a full, round mouthfeel. Good color, expressive nose. Missing some complexity on the finish or the score would be even higher but this was a remarkably good bottle (hence my remark). Har har.

Our cuvaison (time on skins, destemming to drain) is around three weeks, sometimes more. This is the general practice in Bordeaux, or used to be when I worked there. We hope our customers will give our Cabernets the same respect in terms of cellaring that they might a good Bordeaux and lay them down for a few years before enjoying.
Cheers,
