    April 23, 2015 - Changes every minute, but in every aspect shows true unique virtue of chenin.
    This is wine. 91-92.

    Day1:
    Intense lemony yellow color with bright clarity. Some residual sugar like vouvray demi-sec. Tastes like best fuji-apple with a lot of honey at the core, soaked in very best scotch whisky. Detailed and solid acidic structure. Feels featherly and high-toned despite the strength of the fruit. Long persistent finish with a hint of caramel.

    Day3:
    Color turned into shiny light gold. Pear and aged ume-shu. A touch of oxidative complexity. Acidic backbone gives precise focus to the entire format, feels almost dry despite the residual sugar.

    Day4:(Leftover in the glass)
    Color turned into shiny light bronze. Gained apricot and mead.
