    July 11, 2015 - Opened this screwcapped bottle and right away made a 'pop' sound with gas flowing quickly dissipating. Nose was fine, poured and right away noticed it was fizzy. Could also see white residue along the edge of the decanter. As if someone added club soda to the mix. Wonder if a second fermentation had occurred inside the bottle. Anyways, waited 30 min, the fizz subsided but knew it wasn't right. So returned and deemed it defective. First time I've encountered an issue like this.

    Anyways second bottle of the night popped and this time, no issues. Decanted for 20 min and it was its usual self. Still tannic and young. Found it not as fresh and lively as my last bottle from a few months ago. Might be going through a shut down phase.

    On Day 2, I tasted and this had really opened up with tar, blueberries, pepper, sweet red dark fruits. A Wallace I'm used to having.

    Day 3 it was still solid with the same flavours and nose. Anyways interesting to see it evolve like this over 3 days. Will wait till year end or next year before opening the next bottle. Has a lot of time left.
