    December 17, 2015 - Cepages Bordeaux Tasting (North End Grill; New York City): Drank at our Cepages bordeaux tasting alongside a '95 Clinet. Very generous nose of blackberries, plums & perhaps some truffles. Deep red garnet in color. This is a massive, full bodied, modern-style wine with an extremely tannic backbone, plenty of lush fruit & spice, that also still exhibits a lot of its oak. I can certainly appreciate where I expect this wine will be in 10 years' time, but on this occasion it was hard to drink. Most of us strongly believed this wine to currently be in its 'dumb' phase--as if it was a spoiled child holed up in his room not wanting to speak to anyone. This wine needs time to mature and become friendly. Decant and wait 5-10 years minimum. The wine should then be a 95 pointer minimum

    12/20/15, 4:08 PM - Oh for sure. These bottles needs to sleep until 2030. Opening too soon is just an education in what happens when you don't hold Pavie long enough.

    12/21/15, 1:50 PM - Absolutely agree! A friend brought this Pavie to our tasting (we each had to bring a few bottles) & I'd never had this vintage previously. Incredibly difficult wine to decipher right now. Wish I had some of my own to test in 2030 though...:)
