December 25, 2017 - Big, lush wine. Needed :30 open to calm down. A bit of cherry syrup on open. Then settled in to a quality drinking experience. Will hold other bottle for 6-8 months. Interesting to see if that makes a material difference.

12/26/17, 8:22 PM - I drink a lot of Saxums and my experience has been to obtain the perfect balance is to let them slow ox for most of the day. I usually open them in the morning when I leave the house and drink them in the evening, especially with the 2011 vintage.
