March 25, 2018 - PnP with Japanese kaiseki and sushi. Great match with the Kaiseki, especially the more sour and "fishier" dishes -- for example seared baby barracuda with ponzu radish sauce. It's very good by itself if you like this style but shines with food. Reminded me of the pairings you have in Southwest Spain, fino and sardines! But the wine of course was brighter and had more fruit than a Fino Sherry. Good concentration, nice acids. If anything it reminded me of and older "Y" d'yquem (without the new oak/coconut).
