July 23, 2018 - Tight and tart on day one; nose far richer than the somewhat biting experience. Had some interesting things going on with a bit of smoke on the backend. On day two (with pump preservation) it was significantly smoother but also a lot flatter, without much fruit, though tannic backbone still intact. Not sure it will improve with age, but definitely waiting on popping the rest of our stash in hopes it will. Not bad, but not very interesting.

7/25/18, 5:14 AM - My experience is that vacuum-pumps strip wines of aromatics and flavor. I stopped using them and keep handy clean 375 ml bottles to top up and store leftover wine in.
