    July 30, 2018 - An hour of air helped here, adding more body, and depth. The wine offers layers of licorice, blackberry, dark cocoa, smoke and tobacco. Lush, round, sweet and juicy, this is quite sensuous. There is a minor touch of dryness on the backend, but you need to be looking at it closely to see that, as the wealth of ripe fruit is there from start to finish. There is no heat, or jammy notes. The wine is drinking very fine today.

    7/31/18, 3:14 PM - Jeff, I'm not good at popping and pouring BDX. I'll do it with a Cali cab if I'm working and eating late, but I'm only drinking my BDX when I can give them time. For instance, an off day or the weekend when I can open them 1-2 hours before dinner, then enjoy over 1-2 hours during and after dinner. The '03s of Poyferre, Pontet Canet and Pape Clement all seem to be behaving similarly right now and really move through many good stages over a 4 hour time period, IMO.

    8/1/18, 8:25 AM - I probably popped the cork and decanted the wine about 30 minutes in advance. I seldom know what I want to drink in advance of cooking.

    Frankly, I find that long decants do more harm than good. Very few wines are better with 4 hours or more of air, especially if the bottle is older. 2003 is already 15 years old and it's a very forward vintage.
