  November 12, 2018 - Complex, broad shouldered champagne. Rich and bold, perfect balance of ripe fruit and gorgeous acidity. Really a well made PN bubbly.
  Next day much of the fizz is out, and acidity with it. It gives way to sweet, delicious fruit, such lovely ripeness. Much prefer first day balance and complexity, and second day evolution just underscores intellectually how the balance of those two powers came together yesterday.
