December 24, 2019 - Coravin fun - Domaine de Chevalier rouge (My place, Kent Street): From Coravin. Polished oak, blackcurrant, brambles, jubey black fruits, a little coffee, touches of raspberry, vanilla, caramel. Juicy, rich, jubey, ripe fruit is bold, silky smooth tannins offer structure but also support. Lightly spiced. Beautifully balanced. Utterly approachable now but with the ability to age. Yum.

    12/25/19, 8:41 PM - Hey PortlandSeth,

No need to apologise! Jubey is, for me, the quality of a hard boiled sweet...like a cherry menthol that you might suck when you have a sore throat without the menthol. A confected, candied fruit quality but not soft like a wine gum. It usually tends to be more of an aroma than a taste profile; so the smell of boiled sweets, though if I find it on the palate it is a quality of 'cooked' fruit - so not like jammy or stewed fruit, but not as cooked as compote for instance - but without the associated sweetness (unless I mention e.g. residual sugar). I mostly seem to encounter it with either full or partial whole berry or whole bunch fermentation, in the latter case with stalky or stemmy notes...

Sorry, gone on a bit, but I hope that helps...let me know if you would like further clarification.

    cheers, chatters
