  April 6, 2018 - Rather lean and mean upon opening, and it was still austere on day 2.
  Finally on day 3 this shows wonderful developed cultured butter notes, seaweed, a slender core of richness and bracing acidity. Bone dry. Reminiscent of a young disgorgement of Selosse Initial.
  This will be a beauty in time but is a firm hold now, for my palate.
