  April 13, 2020 - Really needs to open up. Sour upon popping, but then begins to elongate within 20 mins. Pleasant upfront cherry with some minerality. Some tannin in the background keeps the balance. Thin to medium bodied. Pasta, pork would pair well. As time has progressed, gets more astringent-40 minutes in. Likeable, slow quaffer. Not a lot of depth-do not see the more complex structure others see.
  
  OK. After 4 hours really opened up. Red cherry, licorice slightly, fuller body, dry tannin finish.
