April 23, 2020 - First taste was cherry cola. Similar to what you get at a Sonic Drive-In. Boring. Very clean and pristine. Not earthy at all. To me the quintessential California Pinot Noir. After 2 hours it did open up to deeper flavors. Now getting fresh raspberries. Not dark nor charred fruits...very fresh. It got deeper but then reemerged as more simple. So we poured into 3 different glasses. The classic Burgundy glass brought back the cherry cola in your face. The cabernet glass kept it more dark. Fascinating. Not bad nor good. We hoped it was food friendly but there was no chemistry. Salmon, white beans, mushrooms, and sorrel.
