June 23, 2020 - Good lord this was fantastic. Deep yellow color. Nose shows briny, green olive, natty goodness, but also it opens up to show complex floral, savory tones. Precise and intense on the palate, rushing and thrilling in a downhill rapids into the ocean kind of feel here. Lemon peel, orange peel, apricot fruit, with shaved ginger, oyster shell, minerals and olive brine. Beautiful stuff that I'd love to revisit in three or five years.
