  August 27, 2020 - A tad reductive upon opening with some vanilla, smoke, and toast that all seemed to disapate with air. After about 20 minutes this bottle really settled into a nice spot. There was still some oak presence but balanced by some pear, golden apple, and plenty of acidity. This was a well chosen match for salmon with a tomato, shallot, champagne vinegar topping sauce. Delicious!
