    November 14, 2020 - Precious Pégau. Dense dark indigo-purple to the eye. On the nose, notes of granite and forest, merged with ripe fall fruit aromas. On the palate, after decanting for an hour, different sensations emerged with each passing hour of sipping (matched with NY strip steak, fingerling potatoes, mushroom compote, fresh-baked bread, and a spring-leaf salad). Throughout, beautiful bevies of dark berries, in the first hour, with a surprising spot of bright tang in the upper-mid palate –– an unexpected and delightful topnote of strawberry. By the second hour, this was replaced by tinges of dark chocolate and umami richness. In the third hour, soothing texture was at the forefront, with smooth tannins imbued in every sip. In the fourth hour, tasting the afterglow of experience in an extraordinary wine.
