    January 21, 2021 - Ken's High Flying Hermitage (Ken's Castle): Extraordinary wine! Massive scale and polish at the same time. Ripe berries, cassis, blackberry, currant and a touch of smoke, displaying a very complex bouquet. Gobbs of fruit on the palate without a pinch of excess. Very well put together, expansive and seamless. There is a alot of wine here, this should age very nicely but very good right now too. Drink or hold, you won't be diappointed!

    1/27/21, 2:55 PM - When it was released in Sept '19 it was fantastic! I bought a bunch and drank through many of them. Started to back up around June as you noted and was still closed when I did a coravin taste around Thanksgiving. I'm thinking of opening that coravined bottle and letting it get a few hours of air and see how it behaves. I find that cures a lot of ills in these big '16s and then they perform quite well.....

    1/27/21, 3:33 PM - Appreciate the additional intel. That Coravin bottle might be ready now for PNP. I find that with Coravin’ing some wound up wines... a super slow ox process occurs which can help speed things along. Let me know once you revisit.

    1/29/21, 4:50 PM - Hey CitySquirrel.......re-coravined my bottle tonight. Don't know if it's been the slow ox of the last few months or if it's just in a great place but it is now in a great place.....regal nose on the pour......sweet perfume, rose petal and graphite. On the palate here is beautiful red fruit, cassis, kirsch anything and everything that presents a saturated fruit to the back of the tongue! There is regal winemaking here by Sam Kaplan. The acidity is blending in nicely and the tannins ae evolving. There is beautiful sweet tobacco and a hint of vanilla. Really nice!
