  January 1, 2021 - Dark fruit (cherry, raspberry), rose- floral, spice, slight soy. Earth. After a couple hours open - strong spice - 5 star anise, slight soy, strong floral. Good acidity. Lingering finish. Really enjoyable.
  Decanted an hour or so before drinking. Good color.
