    February 13, 2021 - Clearly its age shown in capsule and cork; cork wet through and slid out pretty easily; brownish orange, mahogany color; initially the nose is very shy, a feint hint of older fruit with tertiary qualities, very similar to a ‘78 Chanson Pernand Vergeles consumed day prior. Similarly, this wine shares a marvelous soft but viscous texture which helps carry the finish. The ‘78 Pernand didn’t really open up into something impressive and at first anyway, this ‘71 Beaune (monopole) wasn’t very special either. Stoppered up and revisited 12 hours later: the nose gives up richer fruit, savory dried meats, Earl Grey tea and some autumn leaves. Amazing what some “air time” can do for a nice aged burg. We’re often too timid about this but you can generally tell whether a wine is too frail to handle it. And this had been decanted off significant sediment. Actually, the first Chanson burg to impress me.
