  May 31, 2021 - Slow decant, five hours before the first glass. Seared meat, charcuterie, green olive and pencil lead on the nose. The wine is gamey and rich, with black pepper, green olive and green herbs. Yeah there’s some red berry fruit lingering behind the scenes but that’s not what you’re here for - all these funky qualities steal the show. Excellent to drink, right in a perfect window - no reason to wait.
  
  This really plays well as a counterpoint to Wild Eyed, we drank the same vintage of that wine a few months back which was all fruit - be great to open side by side.
