    June 15, 2021 - Straw yellow, lively fine mousse; apples, lemons, biscuits, minerals; apple/lemony, minerally, light body, crisp acidity, lingering finish.
    Lively bubbles went up my nose. Fruity with yeasty, biscuit note best described by other reviewers as brioche. Chalky minerality and palate-cleansing array of malic, tartaric and citric acids give this structure. Went well with lobster salad. Recommended.
