    December 10, 2021 - A bit of leesy funk on first pop but not to worry, with just a few minutes of air the 1996 Dom Pérignon Oenothèque reveals itself as lightning in a bottle with an understated nose of lemon, marzipan, smoke, and buttery pastry that only whispers to the possibility of the explosive palate with layers of citrus and minerals. Concentrated and intense. Rich mousse. Dry but not austere finish. This is killer.

    (Oenothèque is the same base as the standard cuvée, with the Oenothèque receiving an additional five years on the lees while under cork, not crown cap. Once disgorged, the Oenothèque dosage is generally less than the standard cuvée's, around 6.5 g/l this vintage.)

    12/11/21, 4:48 AM - I haven’t heard the cork v crown cap comment before, however I think the additional 5 years on lees is the more defining difference.
