  December 25, 2021 - Slow ox’d for 2 hrs.
  
  Classic Nebbiolo nose of cherry, rose, and a little bit of tar /funk at first that quickly blew off. The smell really evolved quickly after opening to the point where I recorked after a couple hours. In hindsight, I would have continued the slow ox or even a short decant.
  
  Dark cherry, dried red fruit, licorice, earthy mushroom notes, and floral notes on the palate. Great complexity and concentration. Tannins still grippy and room for further integration. Will be a good one for several years to come.
