  December 19, 2021 - Remains similar to previous bottles, but starting to fade a little, and the acidity less pronounced. Definitely time to drink up.
  
  Pale lemon. Clean nose, white blossom, herbal notes, lemon, grapefruit, white pepper, hazelnuts. Developing.
  Dry palate, medium+ fresh acidity, medium alcohol and body, grapefruit and green herbs evident on the palate, quite creamy but mineral too, long finish.
