    June 8, 2022 - Probably the most enjoyable Bordeaux I've tasted. Near perfectly balanced with a fine tannin structure and a good integration of dark fruit and acidity. I decanted the wine 3 hours before pairing it with a prime rib eye steak. The decant was essential to get the most from the cedar box nose. In fact, the little wine I had left on the following day was even more expressive. The palate was full bodied but elegant, the finish lingering for many seconds. Unfortunately, the wine completely lost its balance on the second day, even though I had it under partial vacuum and refrigerated. Oh well, it was great when it counted.

    6/8/22, 10:28 AM - Nice review. Looking forward to taste mine. While it prevents oxidation of the wine, putting wine under vacuum literally sucks the dissolved phenolic gases (the aromas that carry some of the flavors as well) right out of the wine. In my opinion, the best way to keep leftovers is to transfer the wine to a smaller bottle.

    Small glass medicine bottles with screw caps available on Amazon in 6, 8 and 12 oz sizes work great.
