Nick and Colleen's Engagement Dinner at Ma Langue Sourit, Luxembourg

Introduction
Ma Langue Sourit (My Smiling Tongue) is a one Michelin Star Restaurant in Luxembourg. Starting at Colleen's fathers house we has a bottle of Veuve Cliqote with salmon bellinis then on to the restaurant. We enjoyed a gastronomic dinner starting with 3 amuse bouche, followed by and appetizer of millefeuille of legumes, a second appetizer of lobster salad, a fish dish of St. Pierre, a mango sorbet with whipped cream, a rapade of rabbit, fromage plate, and a dessert of white chocolate mousse, berries, and cake. Dinner started at 8.00pm and we left, saying good bye to our chef shortly after midnight.

2003 Marcel Lapierre Morgon
France, Burgundy, Beaujolais, Morgon
See my previous notes from this Summer on this wine. This was another great bottle. My original plan was to finish this vintage off this year as I felt it had peaked and then wait for my 2009's. But after the last couple of bottles I have decided to hold the last two till next summer. Drink by 2011.

2002 Domaine des Varoilles Charmes-Chambertin
France, Burgundy, Côte de Nuits, Charmes-Chambertin Grand Cru
Being a 2002 Grand Cru it was as expected a dark color for Burgundy. The nose on opening was a nice earthy with a background of red fruits cherries and cassise which faded over the course. On the mouth a very full wine with good balance. The smells carried through with the addition of licorice and caramel. A perfect match for the St. Pierre fish on carrot, ginger, garlic vegetable mould.

2007 Château de Beaucastel Châteauneuf-du-Pape
France, Rhône, Southern Rhône, Châteauneuf-du-Pape
This wine was the star of the evening for me. CdP's are Leslie's favorites and Beaucastle is one of the great CdP's with 2007 being the outstanding vintage of recent times. We decanted for 1.5 hours due to the youth of the wine. It had intense aromas of pepper and candies red fruits. The mouth feel was like a big spoonful of Fruit de Bois jam! Unbelievably bold and full. Spice, earthy, licorice and layered with complexity. It was a lot of wine to go with a rapade de Lapin. This wine will improve over the next 5 years for sure and probably 10.

2001 Silver Oak Cabernet Sauvignon Napa Valley
USA, California, Napa Valley
Decanted for 2 hours to give a thick jammy dark berries, coffee, and coco. A little vegetative under note. Excellent with pecorino cheese course. This wine will keep for 3-4 years as the long decant gave a perfectly round mouth of balanced round tannins and sharp acid.
