No formal notes. Very good.

Flight 2 - First Course (3 notes)

Fresh Dungeness crab in layers with avocado and cocktail sauce wrapped in smoked Sockeye salmon and pink grapefruit...

White
2007 Domaine Denis Bachelet Bourgogne-Aligoté France, Burgundy, Bourgogne-Aligoté

At first the nose was quite musty reminding me of an old house with mothballs. After a few minutes that blew off leaving notes of soft and slightly sweet citrus fruits. Palate is much of the same but with sour citrus rather than sweet and a touch of minerality. Medium body, medium to high acidity with a very tart lemon finish. Refreshing, simple and enjoyable. Good.
White
2008 Domaine des Malandes Chablis 1er Cru Vau de Vey France, Burgundy, Chablis, Chablis 1er Cru

Nice nose of green apple, minerality and light smokiness. Sweeter grapefruit and lime notes on the palate becoming wonderfully sour towards the finish. Medium bodied with great acidity and length. A blast of minerality on the palate adds complexity and freshness. Drinks well now but waiting 5 years will be rewarded. Excellent. 90+
White
2007 Bonneau du Martray Corton-Charlemagne France, Burgundy, Côte de Beaune, Corton-Charlemagne Grand Cru
91 points
Pronounced nose of warm citrus fruits, minerality and smoky oak. Similar flavours with a lengthy and fresh finish. Round in the mouth yet maintains precision and focus. Medium body and acidity. Drinking well in its youth but requires 5 years to hit its stride. Excellent. 91+

Flight 3 - Second Course (3 notes)

Roasted Quebec duck breast with duck leg confit, huckleberry sauce, zucchini and Chanterelle mushroom flan with house french fries...

Red
2007 Domaine Ghislaine Barthod Chambolle-Musigny 1er Cru Les Chatelots France, Burgundy, Côte de Nuits, Chambolle-Musigny 1er Cru
90 points
Huge and youthful nose of ripe pinot fruit with cinnamon and hints of stewed meat. There’s also some oak on the nose but it’s well integrated. This is the lightest of the three red in this flight but offers great depth. Solid structure all around with medium acidity and tannins and a lengthy finish. Needs 5 years. Excellent. 90+
Red
2007 Domaine d'Eugénie Vosne-Romanée 1er Cru Aux Brûlées France, Burgundy, Côte de Nuits, Vosne-Romanée 1er Cru
91 points
Beautiful Vosne nose of Asian spice box with ripe dark red fruits. On the palate flavours of pure cherry, raspberry and sweet cranberry fruit with a blast of spice coming through on the long finish. Silky, balanced and well structured. This paired perfectly with the duck. While extremely enjoyable now, this will be even better in 5-10 years. Excellent. 91+
Red
2007 Domaine Tollot-Beaut Aloxe-Corton France, Burgundy, Côte de Beaune, Aloxe-Corton
88 points
Pronounced and developing nose of massive red cherry and raspberry with hints of spice funky vegetal notes. Cherry flavours dominate the palate with some well integrated oak. There’s a masculine profile to this wine that makes it stand out in this flight. Finish is slightly lean leaving more tannin and acid on the palate than anything else. A bruiser of a wine. Very good.

Flight 4 - Thrid Course (2 notes)

A selection of cheeses...

Red
2007 Domaine des Lambrays Clos des Lambrays France, Burgundy, Côte de Nuits, Clos des Lambrays Grand Cru
89 points
Right off the bat your senses are blasted with pronounced aromas of stalks and stems with cool red fruits underlying. After a few minutes notes of celery and cinnamon start to come through on this extremely vegetal nose. This profile is carried through on the palate but to a much lesser extent. Doesn’t have the concentration of the Clos de Tart but shares its elegance. Powdery and mouth drying tannins. Needs time. Very good. 89+
Red
2007 Domaine du Clos de Tart Clos de Tart France, Burgundy, Côte de Nuits, Clos de Tart Grand Cru
92 points
Pronounced nose of spice and deeply concentrated sweet pinot fruit that would have me guessing Vosne-Romanée in a blind tasting. After a few minutes candied cassis, black liquorice and cinnamon start coming through on the nose as well. In the mouth there are layers of fruit with a velvety texture that’s followed up with a blast of acid and tannin yet it remains very well balanced. There is some slight heat coming through on the lengthy finish. This is extremely intense on both the nose and palate and is showing more youthfully than any wine tonight. Wait 10 years at least. Excellent. 92+
