Introduction

A little get-together for our team at Shanahans in the Denver Tech Center.

Flight 1 (1 note)

Red
2007 Chateau St. Jean Cabernet Sauvignon Cinq Cépages USA, California, Sonoma County
90 points
Still a young wine to me, and very muscular. The tannins grip the palate followed by dark fruits and cassis; some black cherries and oak to go along with it. Got a little smoother as time went on. This is definitely something you want to hold on to for a while. Drank with bison steak.

Flight 2 (1 note)

Red
2006 Peju Province Winery Cabernet Sauvignon USA, California, Napa Valley
93 points
This is a very good wine that went well with the bison steak I had. Nose of dark fruits and some dark chocolate. Good body and solid structure with the smooth tannins that made the wine go down really well. The oak did not interfere, and the palate was getting a lot of black fruits and cassis. A hint of toasty vanilla also. Outstanding wine for my palate.

Flight 3 (1 note)

White - Sweet/Dessert
2004 Château Raymond-Lafon France, Bordeaux, Sauternais, Sauternes
91 points
Good Sauternes to cap a night. Good legs on the glass. Smells of botyrized honey and some apricots and yellow fruits. The taste of honey is there but it is not too concentrated, then comes the rush of the peaches and apricots with a hint of pineapples. Not acidic at all and has a nice finish to it.
