Introduction

First time our Chicago Burg group got together for dinner at Everest, to enjoy the type of old school French food i truly enjoy.

Flight 1 - With the Amuse Bouche (1 note)

White - Sparkling
1998 Krug Champagne Vintage Brut France, Champagne

Lots of mature orchard fruit aromas and flavors with some nutty, bready character. Slightly more advanced that I might hope for Krug at this stage in its evolution. Perhaps best over the next 3-6 years.

Flight 2 - With Rabbit and Capon Terrine (3 notes)

White

Best I've ever found this wine to show. Intensely floral start with fresh orchard fruit aromas and flavors. Background spice hints throughout. Very good length and power.

Double decanted 20-30 minutes before serving. Don't recall if I have had this before, but it came across as subtle to start, particularly on the nose. I like the flavors, but didn't find the complexity I was expecting.

Slightly past its peak, while still showing very good concentration and intensity. But a bit too much butterscotch here.

Flight 3 - With Sensatioanl Aged Risotto (3 notes)

Served single blind. Open an hour before serving. Totally rock star tonight. Lots of apple and lemon peel with sensational floral notes throughout. Starts slightly lean, ends rounded and alluring.

Slightly floral with lots of lush orchard fruit on both nose and palate. Incredibly fresh for its age, but with the bones that have enabled it to hold up. Drinking beautifully now.

Served single blind. Open an hour before served and double decanted. Lots of orchard fruit, very lean and edgy with great power and concentration. Least accessible in the flight, but with the greatest energy and long-term potential.

Flight 4 - With Halibut (2 notes)

Single blind alongside the 1999. Earthy red fruit with muted spice. I thought this slightly heat damaged, in that it came across as far more tired, less vibrant vs many bottles tasted over the past few years. Perhaps 88-89 points based on how it showed tonight.

Open 2 hours before serving, tasted single blind alongside the 1998 vintage. This jumped out of the glass with spice and enticing perfume. Cross-section of great red fruit flavors with sensational spice. Intriguing textures and close to perfect harmony. By a slight margin this was my WOTN.

Flight 5 - With Veal Tenderloin (3 notes)

Open 2 hours before serving with 1 hour in decanter. Served single blind alongside the 01, 02 vintages. Dense and very ripe fruit, mostly showcasing red and black cherry. Almost accessible today, probably the wine with the greatest long-term potential in the flight.

Open 2 hours before serving, then poured single blind alongside the 99, 02 vintages. Very forward and pleasurable tonight with charming red fruit start-to-finish. Probably the most enjoyable now, but I found this the least complex of the flight.

Open 2 hours before serving with one hour in decanter. Served single blind alongside the 1999 and 2001 vintages. Gorgeous now, my favorite of the flight for consumption now. All red fruit with great spice and especially impressive balance.
