Flight 1 - Aperitif (1 note)

White - Sparkling
2003 Dom Pérignon Champagne France, Champagne
91 points
Golden color. Nose shows richness, ripe apples, apricots and caramel. Unfortunately the wine is lacking depth, complexity and lenght. Quite one dimensional. Drank this wine at least 10 times in the past two years and it never touched me. Despite the fact that it is ok for a difficult vintage, I do not think this deserves the DP label.

Food: Quail Paté with Waldorf Salad and Brioche

Château bottling with MS fill. Brick color. Nose showed lovage, coffee and some dusty notes. Still nice sweetness but overall surprisingly short and light. After 10 minutes the wine fell completely apart. Not the legend I was hoping for and not a representative bottle.

Mature color. Nose showed sweet berries, prunes and herbs. Very powerful, multilayered, powerful and long. Perfect balance and nice sweetness. This is a superb wine. While it is fully mature is still has some life left.

Mature clear red. Nose showed flavors of black licorice, mint, Portwine and Coffee. Very smooth, multilayered and long. Sweetness is still here. Superb example of a mature Cheval Blanc.

Mature brick color. Nose showed ripe berries with hints of vegetable notes. Nice depth, powerful and long. Very balanced and good sweetness. The only negative were the somewhat dry tannins. Overall still a great wine for its age. Now fully mature

Mature brick red. Nose was dominated by leather and mushroom notes. Good length but too much acidity. Dry and just one dimensional. Drink now

Mature in color. Nose was loaded with ripe berries (raspberry) and prunes. Lots of power, nice sweetness and good balance. A bit short and high on acidity. Als the tannins are too dry for my taste. Still a good wine and one of the best 1966s I had so far.

Ripe garnet in color. Nose showed mature raspberries with hints of tobacco and unfortunately an unpleasant (sweaty) taste. Mature, short, metallic and one dimensional. Tannins are too dry. Not my type of Cheval...

Mature red. Nose showed Portwine notes and lots of wood. The wine is dominated by alcohol and dry tannins. One dimensional. Did not like it. Looking at other Cellartracker notes I expect that this was a bad bottle

1973 Château Cheval Blanc France, Bordeaux, Libournais, St. Émilion Grand Cru

Mature garnet in color. Nose shows black licorice, red berries but also hints of sulfur. Overall it is an elegant (light) wine, nice sweetness and good structure and for a 1973 this was a superb wine.

Nose shows mature red berries, prunes and hints of dark beef stock (demi glace). Still a nice sweetness and quite long and rich. At the same time there is too much acidity and dry tannins. Drink now, fully mature.

1976 Château Cheval Blanc France, Bordeaux, Libournais, St. Émilion Grand Cru
92 points
Clear red with brick color at the edges. Ripe red notes (figs and raspberries). Nice sweetness, floral notes and good length. Acidity is a bit too high. Overall still a nicely balanced wine with a solid backbone. For sure one of the better 1976s. For people born that year (such as me) a good buy especially when found in large formats, as the 0.75 are already quite mature.

1982 Château Cheval Blanc France, Bordeaux, Libournais, St. Émilion Grand Cru
95 points
Clear garnet in color but already surprisingly mature comparing to 1982 Medocs. Nose again red berries and prunes with hints of coffee and truffles. Nice sweetness, elegant and long. Multilayered and complex. Not one of the great 82s but still solid.

Light amber in color. Nose of orange peel, chestnut honey and dried apricots. Nice balance between acidity and sweetness. Very long and elegant at the same time. All still very fresh. A superb Sauternes and a legend in the making.
