Introduction

This was a fun night with Wil Bailey from The Wine Company discussing all things Chablis. What could be better than that? Oh yeah, drinking all Chablis....

Flight 1 (7 notes)

White
2015 Domaine Louis Michel Petit Chablis France, Burgundy, Chablis, Petit Chablis
88 points
Straightforward, tasty, no doubt about what you are drinking. Citrus and wet stones. And if you don't drink a bunch of 1er and GC Chablis after it, it's even better. 88+pts.
White
2015 William Fèvre Chablis Champs Royaux France, Burgundy, Chablis
90 points
Light gold color. Drank 1 glass over 90 minutes. Always an overachiever at the price point, this year is no different. Nose has mineral, citrus notes that build nicely, apple as it opens further; the palate is crisp with saline, citrus and apple. I'm always happy to drink this, and it's a good option on lists. 89+ to 90pts.

2015 Domaine William Fèvre Chablis 1er Cru Montmains France, Burgundy, Chablis, Chablis 1er Cru

Pale gold color. Drank 1 glass over 90 minutes. More intense on the nose than the Royaux for sure. More oyster character with a hint of fennel; quite crisp, riper and a bit more fleshy, although there is more ripeness, it does not lose its freshness. Likely a better vintage for this site.

Pale greenish color. Drank 1 glass over 90 minutes. This looks to be a shining star. Recent notes look to be accurate, I like Burgundy Al's take on this. Lovely nose with saline, sea breezes, white florals, and white citrus fruits. The palate has really focused minerality, tart white fruits, lemon-lime, elegant with an earthiness to the brine. There is some richness that comes through in terms of the depth and power, and a hint of vanilla bean on the medium plus finish. Very promising, 92+(+)pts.

2014 Domaine William Fèvre Chablis Grand Cru Les Preuses France, Burgundy, Chablis, Chablis Grand Cru

Light gold color. Drank 1 glass over an hour. Oh yes, I love that signature dank seashore nose, citrus with building tangerine notes, lemon, orange peel, florals with oh so fresh minerals. The palate gets your attention even more with its precision and elegance: lemon, saline, oyster shell, tangerine, and hints of toast. Already fantastic, this will be better in a couple years. 93(+)pts.

Light gold color. Drank 1 glass over an hour. As you would expect, this was a little tighter, although some of the vintage is apparent. This was the only wine that had any suggestion of tropical fruit, along with melon and apple and very good minerality. The palate was a bit tighter and a little edgy now with more ripeness to the fruit, citrus, white peach, and hints of pineapple over the seashell minerality. 91+(+)pts.

Light gold color. Drank 1 glass over an hour. This is a rock star, simply stunning and in its glory already. Wow, this just jumps out of the glass with power and intensity, earthy, seashore, citrus, complexity, cedar dust, dried mushroom, tangerine, pear, and oyster. The palate has amazing purity and precision. On the palate, complex citrus, spiced pear, golden apple, mushroom, tangerine, both great acidity and distinct minerality, so fresh. There is so much power but all contained in a crisp and elegant wrapper, so deep and there's a texture that is pure and lovely, on top of a crazy long finish. This is a beauty. I'd love to drink this next to the '10 Les Clos we had a few weeks ago as both were stunning.
